Title: Cream Soup Mix
Categories: Mix Soup Diabetic
Yield: 3 Cups

2cInstant nonfat dry milk
  Powder
3/4cCornstarch
1/4cLow-sodium chicken bouillon
  Granules
1tsOnion powder
1/2tsDried thyme
1/2tsDried basil
1/4tsPepper

Combine all ingredients; mix well. Store in an airtight container. Diabetic exchanges: 1/3 cup of mix equals 1 skim milk, 1 starch; also 149 calories, 168 mg sodium, 5 mg cholesterol, 25 gm carbohydrate, 10 gm protein, 1 gm fat. For a condensed cream soup substitute. Blend 1/3 cup mix and 1 1/4 cups water in a 1-qt. saucepan or microwave-safe dish until smooth. Bring to boil or microwave for 2 1/2 to 3 minutes. Stir occasionally; cool. Use as a substitute for one 10-3/4-oz can condensed cream of chicken, celery or mushroom soup. For 1 1/2 cups soup: Blend 1/3 cup mix and 1 1/2 cups water in 1 1/2 qt saucepan or microwave safe dish until smooth. Boil or microwave for 3 to 3 1/2 minutes. Stir occasionally.
